As far as I know that depends on the license that's attached to the device you're installing.

You can override the automatic choice of edition by adding the file ei.cfg to your installation medium. If you install from USB, that should be straightforward. If you install from DVD, not so much...

plus the ability to delay or defer feature updates or upgrades in Win10 Pro
Win10 Home starting with the 1903 release only had ability to pause updates but not have the option to defer big feature updates
