You can't choose  specific build number when downloading the Office iso, that's what Microsoft is offering.

Why the build should matter according to you ?

I don't know about the build number, that shouldn't matter anyway, Office will auto update.

Using Windows 10 LTSC would also help, because it is much less bloated.
